How to Make Chicken Casado!

One of my favorite dishes in Costa Rica is called Casado. Casado means "married" and this dish is always served with the combination of rice and beans and often a vegetable or salad and some patacones (fried plantains). Yum! It is a traditional meal that can be made with: beef, fish or chicken. After trying Casado in different parts of Costa Rica, this is the recipe my mom came up with to make it.


Ingredients:
Chicken Thighs and/or Legs (we use four of each)
2 Bay Leaves
1 Can of Tomato Paste (or pouch if you are in Costa Rica)
1/2 a Cup of Salsa Lizano (Salsa Lizano is like the Costa Rican ketchup. Ticos put it on                                                            EVERYTHING! You can get it off of Amazon.(Unless you are in Costa                                            Rica.))
1 Sliced Onion
1-2 Sliced Red Bell Peppers
4 Teaspoons of Powdered Chicken Bouillon (or 2 pouches of consome de pollo concentrado)
1 Cup of Water
1 Large Bunch (Chopped) Cilantro
Directions:
Combine all the ingredients except the chicken in a large pot
and cook over medium heat for about 10-15 minutes. Add chicken. Add more water to the pot, enough to cover chicken and bring to a boil. Reduce heat and cook for one hour turning the chicken and stirring periodically.
You can turn it down and let it sit on the stove until it is ready to serve. It is best when the chicken is falling off of the bone and the sauce is delicious over rice.
